It has been a busy weekend with a holiday brunch at home, lot of baking and cooking. With the weather being very cloudy and gloomy, I couldn’t get a chance to take photos of the food or even the cookies. Bobby Flay’s Sangrita had tequila in it, but I made a virgin version of it. It has just about all the tastes in it — it’s spicy, tangy, salty and sweet. I made just 2 servings, both for me. I was hoping to drink the second glass later, but my 2 year old really liked it and drank more than half from the second glass. Here’s a very simple and refreshing drink for your next summer party. Watermelons are a great summer fruit and this is a great way to use some of that huge melon lying in the fridge. The concentrate for the drink can be made ahead of time and then served chilled with more ice and sparkling water mixed in.
