Theme: Taste of Home Top 100 recipes of 2015

Dish: Cauliflower Soup

Starting a new month with a new edition of blogging marathon today. My theme for the first week is cooking from ‘Top 100 recipes of 2015 from Taste of Home‘. It was quite a task choosing just 3 dishes from that list. I scrolled up and down that page a million times before picking my dishes.

First up is this creamy and delicious cauliflower soup. It is a very easy recipe to make — cook cauliflower, make cheesy white sauce, mix them together and serve hot!!

But that simple recipe made me skeptical too about how the recipe would turn out. I thought it would be flavorless but I was so wrong. Soup turned out great but I think the next time I will probably add some dried or fresh herbs to give it some oomph.

Cauliflower Soup Yum
Recipe for a creamy, cheesy and delicious Cauliflower soup. Easy to make with just a few ingredients.

Ingredients
  • 2 cups Cauliflower florets
  • 1 Carrot Medium , grated
  • cups Vegetable broth
  • tbsps Butter
  • tbsps Flour
  • cups Milk (I used a combination of Whole and 1% milk)
  • 1/3 cup Cheddar cheese , grated
  • To taste Salt Pepper &
  • To taste Hot sauce

  • 1 Carrot Medium , grated
  • cups Vegetable broth
  • tbsps Butter
  • tbsps Flour
  • cups Milk (I used a combination of Whole and 1% milk)
  • 1/3 cup Cheddar cheese , grated
  • To taste Salt Pepper &
  • To taste Hot sauce
Cauliflower Soup
Instructions
  1. In a medium saucepan, combine cauliflower, carrot and vegetable broth. Bring the mixture to a boil. Then lower the heat, cover and simmer till the veggies are tender.
  2. In another small saucepan, melt better and add flour. Cook till the flour doesn't smell raw anymore.
  3. Whisk in milk and cook till the mixture thickens about 2~3 minutes. Season with salt and pepper. Reduce the heat and stir in the cheese until melted.
  4. Add the cheese sauce into the cauliflower mixture and mix well to combine. Add hot sauce to taste, if desired.

  2. This is indeed a simple recipe and so quick to make. I love cauliflower, but not sure how I would like it as a soup.

  3. Cauliflower soup has been on my to try list for sometime and looked at this recipe as well. After seeing yours, regretting not making it this time. Yes, all the recipes on the list are tempting and was difficult to pick just three.

  4. Make similar with broccoli 🙂 my kids LOVE both cauliflower and broccoli, so shall be making this soon 🙂 and awesome pics as usual – great props and cutlery 🙂
