Dish: Cucumber Sandwich

Today’s recipe is very very simple with just few ingredients. Many of you might even think that this sandwich doesn’t really need a recipe post because it’s that easy and simple.

All you need is green chutney, cucumber, cream cheese (or thick curd) and bread slices. With all the sandwich breads that I have been making, I was looking for simple sandwich recipes and I landed on this post by Sala @ Veggie Belly. Her clicks make you want to grab a sandwich right out of the monitor 🙂

Sala says that these sandwiches are perfect for picnics, but I think they are perfect for any time of the day or year. I had this as my afternoon snack. I think a slice of cheese would not be out of place in this sandwich.

Easy to make Summer time Cucumber tea sandwiches -- these are perfect for picnics.

  • 4 Bread (I used homemade semolina bread) Slices
  • 1 Cucumber - small, thinly sliced
  • 2 ~ 3 tbsps Cilantro Mint Chutney - or as needed
  • 2 ~ 3 tbsps Cream cheese or as needed

Cucumber Tea Sandwich
Instructions
  1. Spread mint chutney evenly on one side of the bread slice. Arrange the cucumber slices evenly on top.
  2. Spread cream cheese evenly on one side of the other slice. Place that slice on top of the cucumber slices, press lightly. Cut the bread diagonally and serve right away. Repeat with the remaining bread slices. Enjoy!!

  1. Spreading cream cheese is interesting. I usually add spreadable butter. Love this quick sandwich when I am running out of ideas to make something for lunch. Works great for picnics as well 🙂

  2. That green chutney adds a nice flavor to sandwiches. I haven’t tried the cream cheese part though I make similar sandwiches.

  5. Interestingly my husband alsoMade me a sandwich wit cream cheese and cucumbers last Sunday 🙂 and I was thinking I have seen that combo somewhere else ! Now I know :-))

  6. I came across a similar type of cucumber sandwiches which I plan to make soon. The green chutney adds a definite flavor.
