  • 3~4 Scallions, chopped
  • 1 tbsp Herbed Mustard*
  • 3 tbsp mayonnaise
  • 2 tbsp Fresh Parsley, chopped
  • To taste Salt Pepper

  • 3 Medium Potatoes, peeled and cubed

Potato Salad with Mustard and Herbs
Instructions
  1. Place potatoes in a saucepan, along with water enough to cover the potatoes by 1″. Bring to a boil, lower the heat and simmer the potatoes until fork tender, about 12~15 minutes.
  2. In the meantime, whisk the mustard, mayonnaise, salt and pepper in a mixing bowl.
  3. Drain the potatoes well and add them to the bowl along with scallions and parsley. Mix well and serve at room temperature.
Recipe Notes
  • If you only have regular mustard, then stir in either fresh or dried herbs like parsley, tarragon into dijon mustard and use that instead.
