By the time we came back home from work last night, it was late and I didn’t have the time or patience to make the dish. Ingredients

Soybeans
1 cup
Onions – large, chopped
1
Green chilies – chopped
3
Cumin powder
½ tsp
Red chili powder
½ tsp
Chaat masala
½ tsp
Lemon juice
1 tbsp
Mustard seeds
1 tsp
Curry leaves
5-6
Fresh mint leaves – , chopped
2 tbsps
Salt
to taste

Steps

  1. Soak soybeans overnight. Rinse and drain the beans thoroughly.
  2. Heat 2 tsp oil in a pan, add mustard seeds and curry leaves and when the seeds splutter, add onions and sauté till tender.
  3. Add soybeans and sauté on medium high till they turn lightly brown.
  4. Turn off the heat and add the powders, salt, lemon juice and mint. Mix well and serve warm or cold.
