Dish: Banana Brownies

Today we are celebrating one of kid’s favorite occasion, birthday. Cakes and brownies are great as desserts for kids parties. These brownies are a little different with the addition of mashed bananas. I found this recipe at Fuss Free Cooking and it looked so yummy that I had to try it right away.


I like my brownies cakey than fudgy. These banana brownies have a cakey texture and they are not overly sweet. I used half wholewheat pastry flour and half all purpose flour to sneak in some fiber into the dessert. 

My son absolutely loved these brownies. These are perfect as give away gifts for a birthday party or serve them with sprinkles or vanilla ice cream on top.

Ingredients
  • ½ cup Brown Sugar Light
  • 1 cup All purpose flour - (I used ½cup of whole wheat flour and ½cup of AP flour)
  • 6 tbsp Butter
  • 3.5 oz Dark Chocolate - ., grated
  • 1 Egg (you can easily use a flax egg or egg-replacer)
  • 2 Bananas - medium, mashed
  • 1/8 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Vanilla extract
Servings: brownies
Instructions
  1. Preheat the oven to 325°F. Line a 8" square baking pan with parchment paper. Grease the uncovered area with cooking spray.
  2. Heat butter and chocolate in a small saucepan, stir until everything is melted. Set aside to cool.
  3. In a medium bowl, combine the mashed bananas, vanilla extract, brown sugar and salt. Then add in the melted butter-chocolate mixture and mix well.
  4. Stir in the flour and baking powder and mix just until combined.
  5. Pour batter into the prepared pan and bake for 30-35 minutes or until a cake tester inserted into the middle comes out clean.Cool the brownies in the pan before cutting them.

  1. Truth be said I won’t mind it either ways, if at all I get to taste that is..:)..my kids love anything chocolate and everything gets over before we taste it properly too..very nice looking brownies Pavani….hope your kid enjoyed the birthday party!

  3. I love brownies but m kids hate the taste of bananas in anything. I cant even use it as ann egg replacer , so i end up using applesauce!Shobha

  4. Love the idea of bananas and wheat pastry flour. Since it is not available here like Manju my query is can i use wheat flour? What is you idea on the proportions.
