For the third day of this week’s ‘whole grain recipes’, I have a flavor packed dish that is great to serve for lunch or dinner. Quinoa pilaf with tempeh and broccoli is a filling meal and is quick and easy to make too. Another great recipe to pack in the lunch box as well.
Quinoa is one of my go-to whole grains and I am always looking for new recipes to include in our daily diet. I found this recipe in Vegetarian Times magazine. What I loved about this dish is that this takes less than 30 minutes to make and is a nutrient rich alternate to rice based pilafs.
I’ve tried tempeh few years back, but I didn’t really like its texture or the taste. It was a little too bitter for my taste, so I stopped buying it. But recently I read somewhere that it is healthier than tofu because it has more protein, higher in fiber and vitamins and is also less processed (than tofu). So I wanted to give it another try.
I’m glad that I tried tempeh in this recipe because it’s cooked in orange juice and broth giving it a very nice flavor and masking it’s bitterness. I couldn’t stop myself from snacking on juicy tempeh cubes straight out of the pan in the name of taste testing. If you are on the fence about tempeh, do try this recipe, I am sure you will become addicted to it.

Quinoa Pilaf with Spicy Tempeh & Broccoli
Ingredients
For Quinoa Pilaf:
- 1 tsp coconut oil
- 1 cup quinoa
- 1" Ginger piece, finely grated
- 2 Garlic cloves, finely minced
- ½ cup Fresh Orange juice
- To taste Salt Pepper
For Tempeh & Broccoli:
- 2 tbsp coconut oil
- 8 oz. pkg Tempeh, cubed (I used mixed grain tempeh)
- 1" Ginger piece, finely grated
- 2 Garlic cloves, finely minced
- 1 tbsp Green chili or Jalapeno, finely chopped
- ½ cup Fresh Orange juice
- ½ cup Low Sodium Vegetable Broth or Water
- 2 tbsp Low sodium Soy sauce
- 4 cups Broccoli florets
- 2~3 Scallions, chopped
- To tast Salt Pepper
- 2 tbsp Cashews, toasted
Instructions
Make Quinoa Pilaf:
- Heat coconut oil in a medium saucepan over medium heat; add the quinoa, ginger and garlic. Saute 1 minute.
- Add orange juice, 1½ cups of water and salt. Bring to a boil, lower the heat, cover and simmer for 15~18 minutes, or until quinoa is tender.
Make Tempeh & Broccoli:
- While quinoa is cooking, make tempeh & broccoli. Heat coconut oil in a large skillet over medium-high heat. Add tempeh and cook for 6~7 minutes or until they are golden brown, stirring occasionally.
- Add ginger, garlic and chile, and cook for 30 seconds.
- Add orange juice, veggie broth and soy sauce to tempeh, bring to a boil. Reduce heat to medium-low and simmer uncovered for 5 minutes.
- Add broccoli and stir-fry 5 minutes or until broccoli is crisp tender.
- Transfer Quinoa Pilaf to a serving bowl. Top with tempeh and broccoli. Garnish with chopped scallions and toasted cashews. Serve warm and Enjoy!!

Quinoa with tempeh and broccoli sounds healthy and delicious. Never tried those combo, sounds unique and also love the flavors(coconut oil and orange juice) get into this recipe, it must be very flavorful!!

I don't mind the quinoa dish with broccoli but will skip the tempeh. I really didn't like it when I tried it. Quinoa is also my choice of grain to use when I need to prepare something quick and easy and yet healthy.

Oh wow this something very interesting pavani , I have never used tempeh and you have motivated me to try it. I don't know why anything fermented like bamboo shoots , soy bean I am skeptical if we would like the taste. This pilaf with quinoa and tempeh looks so inviting , you have shared an amazing recipe.
