Balbuljata (Maltese Egg & Tomaotes) Yum
A very simple scrambled egg dish from Malta called Balbuljata. It is a great dish to serve any time of the day, but mostly for breakfast. Eggs are cooked along with tomatoes and onions and served with crusty Maltese bread.

  • 2 Eggs
  • 1 Tomato – medium, finely chopped
  • 1 Onion – small, finely chopped
  • 1 tbsp Parsley – finely chopped
  • to taste Salt Pepper &

Instructions
  1. In a small bowl, whisk eggs with salt & pepper.
  2. Heat 2tsp oil in a nonstick pan; add the onions and saute until translucent and starting to turn light brown.
  3. Add the chopped tomatoes and cook for 1~2 minutes or until just tender and the mixture thickens a bit.
  4. Add the whisked eggs and cook on medium heat, stirring constantly. Cook till the eggs are cooked and set but still moist, about 2~3 minutes. Serve immediately along with some crusty bread.
