  • 1 english cucumber Medium , chopped
  • 1 pepper Medium Green , chopped
  • 2 ~ 3 Scallions , both white and green parts chopped
  • ½ cup sour cream
  • 1 ~ 2 tbsps lime juice
  • 1 clove garlic
  • 2 tbsps basil leaves, chopped
  • Salt Pepper To taste &
  • 1 avocado Ripe , peeled and chopped
  • 1 tbsp Almonds Chopped

Creamy Cucumber Gazpacho
Instructions
  1. Combine cucumber, green pepper, scallions, sour cream, lime juice, garlic clove, salt and pepper in a blender. Blend until creamy or leave it chunky if you like it that way.
  2. Divide into bowls and chill for at least 1 hour. Serve topped with chopped almonds and avocado.
