  • 15 oz Black beans . canned – rinsed and drained
  • 1 cup corn Frozen
  • ½ cup Salsa Chunky (home made or store bought) – divided
  • 1 tsp Chili powder
  • 1/4 cup Cilantro – chopped
  • 2 tbsp Olive oil
  • to taste Salt Pepper and

Quinoa Medley with Black Beans and Corn
Instructions
  1. Bring 2cups of water to boil in a saucepan. Stir in quinoa, cover, and reduce heat to medium. Simmer for 10 minutes.
  2. Add beans, corn and 1/4 cup salsa and chili powder; season with salt and pepper.Return to a boil. Cover and cook 2 to 5 minutes more, or until quinoa is tender.
  3. Stir in cilantro, oil and remaining salsa. Serve.
