I’m posting on the weekend for ‘Cooking from Cookbook Challenge’ after a very long time. I missed the weekend posts quite a bit, but life got too busy. I wanted to post something last week and to my surprise I had nothing for the event in the drafts. So I made this Spiced Papaya Smoothie from ‘Clean Slate‘ cookbook to post this week.
Papaya is available year round and is a great source of vitamin C, giving a whopping 144% of daily recommended value per serving. It is also a very good anti-inflammatory agent — it contains papin, a protein-digesting enzyme. Along with the vitamin A and E, papain helps to reduce inflammation.
I buy papaya once in a while (Costco being the best and cheap place to buy it) — we eat it as is or I make a tropical smoothie along with some pineapple, frozen mango and banana. But ever since I started making this smoothie, I have been making it more often.
What I found very interesting in the smoothie is the addition of ginger, turmeric and cayenne pepper — it gives the smoothie a nice spicy kick. It’s great to have for breakfast or as an afternoon snack.
