Instant Pot Vegetable Kedgeree

Ingredients needed to make Vegetable Kedgeree

Sauté Veggies in the Instant Pot

Cook until they are crisp tender, about 6-8 minutes

Remove veggies from Instant pot and sauté onions until translucent

Add rinsed and drained rice and lentils

Add red chili powder, garam masala or curry powder, salt and pepper

Add water and cook on Rice mode

Naturally release the pressure and open the Instant pot. Gently fluff the cooked rice and lentils mixture

Add the sautéed veggies and mix gently

Serve hot or warm topped with boiled eggs. Enjoy!!
