Creamy Cucumber Gazpacho

Gazpacho -- Creamy and delicious no-cook soup made with cucumber, green pepper and sour cream. Perfect for the hot summer.

Ingredients

  • 1 English Cucumber Medium , chopped
  • 1 Pepper Medium Green , chopped
  • 2 ~ 3 Scallions , both white and green parts chopped
  • ½ cup Sour Cream
  • 1 ~ 2 tbsps Lime juice
  • 1 clove Garlic
  • 2 tbsps Basil leaves, chopped
  • Salt Pepper To taste &
  • 1 Avocado Ripe , peeled and chopped
  • 1 tbsp Almonds Chopped

Instructions

  • Combine cucumber, green pepper, scallions, sour cream, lime juice, garlic clove, salt and pepper in a blender. Blend until creamy or leave it chunky if you like it that way.
  • Divide into bowls and chill for at least 1 hour. Serve topped with chopped almonds and avocado.
