Ingredients

  • 3~4 Medium Peaches, peeled and chopped (about 3 cups)
  • ⅓ ~ ½ cup Sugar*
  • 4 tablespoons Instant Vanilla Pudding powder (half of a 3.5oz package)
  • ¾ cup Evaporated Milk
  • ½ cup Sweetened Condensed Milk
  • 2 cups Half-n-Half

Instructions

  • In a mixing bowl, combine chopped peaches and sugar and set aside for 1 hour. By the end of the hour, the fruit will be soft and very juicy.
  • Blend the peaches with sugar into a smooth mixture.
  • In a medium mixing bowl, combine evaporated milk, condensed milk, vanilla pudding powder, peach mixture, and half-n-half. Whisk well to incorporate all the ingredients.*
  • Freeze the mixture in an ice cream maker according to manufacture's instructions. Remove into an airtight freezer safe container and freeze until ready to serve.

Notes

  • Buy fresh fruit that is slightly under-ripe and finish ripening them at home. Make sure to buy peaches that are heavy for their size but are not too hard (these will never ripen).
  • Taste the peaches and adjust the quantity of sugar accordingly. Start with the lower amount and add more later on. Also note there is additional sweetness in condensed milk and pudding mix.
  • Make sure to freeze the inner ice cream container before hand to make the recipe.
  • If have evaporated milk on hand, then boil 1 cup of whole milk, stirring frequently, until it becomes about ¾ cup.
  • Ice cream can be made right away or the peach mixture can be chilled for 1 hour or up to overnight.
  • For some texture, you can leave some of the peaches as chunks instead of blending them all into a puree.
  • You can use 1 cup whole milk and 1 cup heavy cream instead of half-n-half.
  • Use canned peaches instead of fresh ones. Use 2~3 15oz. cans of sliced peaches in lite syrup. Drain the syrup, blend into a puree and use according to the recipe.
