Spicy Vegetable Sandwich (Masala VeggieToast)

Ingredients

  • 2 Bread slices (Whole grain/ whole-wheat preferred)
  • 1 Small Onion, finely chopped
  • ½ cup Mixed Vegetables, finely chopped (I conveniently used frozen mixed veggies)
  • 1 Small Tomato, finely chopped
  • 1 Green Chili, finely minced
  • ¼ tsp Red Chili powder (optional)
  • ¼ tsp Turmeric
  • ¼ tsp Garam Masala
  • 2 tbsp Cheese, grated
  • As needed Butter
  • To taste Salt

Instructions

  • Heat 2tsp oil in a small saute pan, add the onions and green chilies and saute till onions are transparent.
  • Next add the mixed veggies and cook covered till done.
  • Stir in the chopped tomatoes, turmeric, red chili powder and salt. Cook till tomatoes get mushy.
  • Finally add the garam masala, mix well and turn off the heat.
  • Preheat the broiler and line a baking sheet with foil.

To make the Masala Toast:

  • Butter the bread on both sides. Spread about 2tbsp of the masala on the bread and place it on the baking sheet. Repeat with the other bread slices. Sprinkle with some grated cheese, if desired.
  • Broil for 1~3 minutes, watching into the oven like a hawk to avoid burning the toast. Broil till the bread is toasted well and is crispy. Serve immediately.
