Add 2tsp oil in a saute pan; add onions and cook till they turn lightly browned around the edges.
Add the garlic, tomatoes, herbs, green chili, salt and pepper. Cook for 5~6 minutes or until tomatoes turn mushy.
Next add the chopped spinach, cover and cook till spinach is cooked through, about 4~5 minutes.
Finally add peanut butter and cook till heated through, about 2~3 minutes. Stir in the chopped herbs and serve with steamed rice.
