Western Samoa -- Poi (Banana Puddling)

Ingredients

  • 2 Ripe Bananas
  • ¼ cup Coconut milk
  • 1~2 tsp Sugar, adjust as per taste and the sweetness of your bananas
  • ¼ tsp Lemon/ Lime zest
  • ¼ tsp Vanilla extract

Instructions

  • Mash the banana into a smooth paste. Add all the other ingredients and refrigerate for 30 minutes.
  • Banana will discolor and form a dark layer on the top. Just mix it in. Try to eat this pudding as soon as possible.
