Applesauce Oatmeal Bread

Ingredients

  • ¾ cup Sugar
  • ½ cup Vegetable Oil
  • 2 Eggs Large large (or use 2tbsp egg reeplacer whisked in 6tbsp water)
  • tsps Vanilla extract
  • 1 cup All purpose Flour
  • ½ cup Whole wheat flour
  • ¼ tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 tsp Cinnamon Ground
  • ¼ tsp Nutmeg Ground
  • ½ tsp Salt
  • ½ cup Oats Old fashioned Rolled
  • ¾ cup Apple Sauce
  • ½ cup Walnuts - chopped

Instructions

  • Preheat oven to 350°F. Lightly grease a 9"x5" loaf pan.
  • In a large bowl, mix together sugar, eggs (or egg replacer mixture), oil and vanilla.
  • In a separate bowl, combine the flours, baking powder, baking soda, salt and spices.
  • Add the dry ingredients to the wet ingredients and mix well.
  • Stir in the oats, applesauce and chopped walnuts. Mix well to combine.
  • Pour the batter into the prepared loaf pan and bake for 55~60 minutes or until a cake tester inserted into the center comes out clean. Remove the bread from the oven and cool completely before slicing.
