Make the Sev: Mix all the ingredients with enough water to make a thick batter. Heat oil in a wok for deep frying. Using a janthikala gottam/ cookie press make the sev. Fry until golden brown, remove onto a paper towel to drain.
For the Maida Biscuits: Mix all the ingredients in to smooth dough. Roll into a thin disc, using a sharp knife, cut into diamonds or use a cookie cutter or even the cap of a small bottle to make small round biscuits. Deep fry these until golden brown.
Assemble: To assemble crumble the sev in a large bowl, add the maida biscuits and all the other ingredients, mix well and store in an airtight container. This stays well for at least 10 days.
