1 cup of Instant rava idli mix - Makes 8 Idli (serves 1-2 people)
Mix with ½ cup of buttermilk/ sour yogurt and mix to form a thick batter. Set aside for 1 min.
Add 1 more cup of buttermilk/ sour yogurt and mix well to combine. Set aside for 2 more mins. Stir in chopped cilantro. If the batter seems too thick, add a little bit more water.
Steam the batter in greased idli molds in an idli cooker or steamer for 10~12 mins.
Mix with 11/4 cups of buttermilk/ sour yogurt and mix to form a thick batter. Set aside for 10 min. Stir in chopped cilantro. If the batter seems too thick, add a little bit more water.

Notes
No Sour Yogurt, no worries - here are a few substitutions that will work:
Use store-bought buttermilk.
Greek yogurt whisked with water to thin it out.
If you want to make the recipe without yogurt, then use equal quantity of water, but also add some lemon juice or vinegar (for 1 cup mix use 1tsp vinegar/ GITS = 2tsp/ MTS mix = 1 tbsp)
