Green Goddess Dip with Avocado

Green Goddess dip is creamy, light and absolutely addictive. Serve with chopped veggies for a healthy and delicious appetizer.

Ingredients

For Green Goddess Dip:

  • 1 Avocado, halved and pitted
  • 1 Scallion, chopped
  • 1 Garlic clove, grated (optional)
  • 3 tablespoons Cilantro, chopped
  • 3 tablespoons Mint, chopped
  • 1~2 tablespoons Lemon juice
  • 3 tablespoons Plain yogurt, either Greek or regular
  • 1 tablespoon Extra virgin olive oil
  • To taste Salt Pepper

For serving:

  • As needed Fresh Veggies
  • As needed Chips or crackers

Instructions

  • Halve the avocado and remove the pit. Scoop the avocado flesh into a blender.
    1 Avocado, halved and pitted
  • Add scallion, garlic, cilantro, mint, lemon juice, yogurt, olive oil, salt and pepper to the avocado in the blender. Blend until smooth and creamy. Add more yogurt if the dip is too thick. Taste and adjust seasoning according.

  • Serve with fresh veggies.
    Store leftover dip in an airtight container in the fridge for up to 2 days.

Notes

  • To choose avocado, squeeze it gently and it should be slightly firm and not overly soft or mushy. Also check under the stem or cap at the top. The area underneath it should be green. If it is brown then it is overripe and best to avoid.
  • Feel free to use either regular or Greek yogurt. If vegan, use dairy free yogurt - I love to use cashew or coconut yogurt.
  • You can add any of your favorite herbs. Cilantro, mint, parsley, basil, tarragon etc. are all great options. Pick 2~3 different herbs to make the dip.
  • Scallions add mild onion flavor to the dip. You can use chopped chives instead.
  • Store leftover dip in an airtight container for up to 2~3days.
  • To make green goddess dressing, thin out the dip with more olive oil and yogurt. Add the splash of water also, if needed.
