Green Goddess Dip with Avocado
Green Goddess dip is creamy, light and absolutely addictive. Serve with chopped veggies for a healthy and delicious appetizer or a quick snack.
For Green Goddess Dip:
- 1 Avocado, pitted and mashed
- 1 Scallion, chopped
- 1 Garlic clove, grated (optional)
- 3 tbsp Cilantro, chopped
- 3 tbsp Mint, chopped
- 1~2 tbsp lemon juice
- 3 tbsp greek yogurt
- 1 tbsp extra virgin olive oil
- To taste Salt Pepper
Combine all the ingredients for the dip in a blender and blend until nice and smooth. Add more yogurt if the dip is too thick. Taste and adjust seasoning according.
Serve with fresh veggies.
Store leftover dip in an airtight container for up to 2 days.
