Vegan Chocolate French Toast

Vegan Chocolate French Toast is a delicious breakfast/ brunch dish that kids would love. It is great to make on Easter Sunday.

Ingredients

  • 8~10 slices Vegan Challah or other sweet bread
  • ½ cup Silken Tofu
  • ¾ cup Almond Milk Or other nondairy milk
  • 1 Small Banana, chopped
  • 2 tbsp Cocoa Powder
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • As needed Vegan Butter, for cooking

Instructions

  • Blend tofu, almond milk, banana, cocoa powder, vanilla extract, maple syrup and salt into a smooth mixture. Make sure there are no lumps. This is great to drink as is, almost like a creamy chocolate smoothie.
  • Pour the tofu-cocoa mixture into a pie plate or a shallow bowl/ plate.
  • Heat a griddle on medium-low flame. Add some butter to melt.
  • Dip the bread in the tofu mixture for a few seconds on both sides. Place in the hot pan and cook for about 3~4 minutes on both sides, or until golden brown and crispy.
  • Keep the French toast warm in a 200°F preheated oven or serve right away with more maple syrup.
