Vegetarian Pizza Pinwheels

These baked veggie pizza pinwheels are easy, cheesy and delicious. They are great as snacks for parties and game nights.

Ingredients

For the Dough:

  • 2 cups Bread flour
  • 1~1½ cups Whole-wheat flour
  • teaspoons Instant Yeast
  • teaspoon Salt
  • 1 teaspoon Sugar
  • 3 tablespoons Olive Oil
  • 1~1¼ cups Lukewarm Water

For the Filling:

  • 1 tablespoon Olive oil
  • 1 Small Onion, finely chopped
  • 1 Garlic clove, finely minced
  • 1 cup Chopped Mushrooms
  • 1 Small Bell Pepper, finely chopped
  • 2 Garlic cloves, minced
  • To taste Salt & Pepper
  • ½ cup Marinara sauce
  • 2 cups Shredded Cheese (mozzarella or cheddar or monterey jack)

Instructions

Make the Dough:

  • In a large mixing bowl or the bowl of the stand mixer, combine all the bread flour, 1 cup of whole wheat flour, yeast, salt, sugar, oil and milk. Add more whole wheat flour if the dough seems too sticky. Mix and knead well to form a smooth, pliable dough, about 6~8 minutes on the stand mixer and 10~12 minutes by hand.
  • Place the dough in a lightly greased bowl, cover and set aside to rise for 60~90 minutes. Dough should double in size by the end of the first rise.
    You can use the Instant pot for the first rise. Lightly grease the inner pot and place the dough inside. Cover with a glass lid and set it in Yogurt mode for 1 hour. If it doesn't rise enough by the end of 1 hour, add an additional 10 minutes.

Make the Filling:

  • While the dough is rising, make the filling. Heat oil in a medium size pan on medium heat. Add the onions, garlic and cook till the onions turn translucent, about 3~4 minutes.
    Stir in the chopped mushrooms and bell peppers. Cook till they are tender, about 5~6 minutes. Season with salt and pepper. Turn off the heat and let the filling cool.

Make Pizza Pinwheels:

  • Gently deflate the dough. On a lightly grease work surface, roll the dough into 12"x18" rectangle. Spread the dough evenly with marinara sauce, veggie filling and cheese.
  • Starting with the long end, roll the dough into a tight log. Cut the log into 12~18 equal pieces, depending on how big you want your buns. Place the rolls, cut side down, on 2 parchment lined baking sheets.
    Cover lightly with a plastic wrap and let rise for 60~90 minutes.

Oven Bake:

  • Towards the end of the rising time, preheat the oven to 350°F. Bake for 25~30 minutes or until the rolls are lightly golden and the cheese has melted.

Air-Fry:

  • Preheat the air fryer to 350°F for 5 minutes. Place the pizza pinwheels in the air fryer and bake for 8~12 minutes or until golden brown and the cheese has melted.
  • Serve right away with some marinara sauce on the side.

Notes

  • You can make the dough entirely with bread flour. I like to add 1~1½ cups of whole wheat flour for some fiber.
  • You can skip the pizza dough making step in this recipe. Here are a few alternative ideas:
    • Store bought pizza dough - skip the first rise, then make the pinwheels and let the dough rise for 60~90 minutes. Bake according to the recipe.
    • Canned crescent roll dough - Unroll and press the perforations firmly to close. Cut into 4 rectangles. Then spread with marinara sauce, veggies and cheese. Roll and cut each into 6 slices. Place cut side down on parchment lined baking sheet. Bake at 350°F for 12~16 minutes until golden brown.
    • Puff pastry - thaw the pastry according to package instructions. Spread and roll as written in the recipe. Bake at 375°F for 15~18 minutes or until golden.
  • Adding veggies is totally optional, but I highly it for taste. Also this is a great way to sneak in some veggies for the kids.
  • Here are a few vegetarian savoury pinwheels fillings ideas: spinach, bell peppers, onions, roasted zucchini, eggplant, carrot, mushroom etc.
  • Make sure to finely chop the veggies. This is ensure the rolls to be sliced evenly.
  • You can even use cinnamon sugar or chocolate spread to make them sweet instead of savory.
  • To make these ahead of time and freeze for later:
    • After the first rise, spread with the fillings, roll and slice into equal pieces. Then place them on a parchment lined baking sheet, cut side down, and freeze for 1~2 hours or until frozen. Place them in a ziploc bag and freeze for up to 2 months.
    • When you are ready to bake, just pop the frozen pinwheels in the oven and bake for an extra 2~4 minutes.
  • To make heart shaped pinwheels:
    • After spreading the fillings on the dough, roll it halfway through into a log from the edge closest to you. Then roll from the top to meet the other half in the center.
    • So, you basically have 2 logs meeting in the center. Press lightly to ensure that the 2 halves don't separate much. Using a sharp serrated knife, cut the dough into 12~18 equal size pieces. Then follow the recipe as written.
