Zapiekanka

Easy to make delicious Mushroom and cheese filled Zapiekanka sandwich. It is a popular street food in Poland.

Ingredients

  • 2 teaspoons Oil
  • 1 Small Onion, finely chopped (optional)
  • 2 cloves Garlic, finely minced
  • 1 cup Mushrooms, finely chopped
  • 1 Small Green Pepper, finely chopped (optional)
  • To taste Salt & Pepper
  • 1 Small French Bread loaf
  • ½ cup Grated Cheddar Cheese

Topping:

  • As needed Ketchup
  • As needed Chives or scallions, finely chopped
  • As needed Tomatoes, finely chopped

Instructions

  • Heat oil in a medium size pan on medium heat. Add garlic and onions (if using) and cook till onions turn translucent, about 3~4 minutes.
    2 teaspoons Oil, 1 Small Onion, finely chopped (optional), 2 cloves Garlic, finely minced
  • Next add the mushroom and green pepper. Cook till both the veggies are tender, about 6~8 minutes. Season with salt and pepper. Set aside.
    1 cup Mushrooms, finely chopped, 1 Small Green Pepper, finely chopped (optional), To taste Salt & Pepper
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper and keep ready.
    1 Small French Bread loaf
  • Slice the French bread in half crosswise. Scoop out some of the crumbs from inside. Place the mushroom mixture on the bread and top with grated cheese. Place it on the baking sheet and bake for 5~8 minutes or until the cheese is melted.
    ½ cup Grated Cheddar Cheese
  • Remove from the oven and drizzle with ketchup and sprinkle with the chives and tomatoes. Serve and enjoy!!

Notes

  • You can use any soft baguette for this zapiekanka recipe. I love using mini French or Italian bread. Whole wheat bread will also work here.
  • Feel free to use either brown or white mushrooms.
  • Choose your favorite melting cheese. I use either cheddar or monterey jack or mozzarella cheese.
  • Zapekanka is best eaten hot, right out of the oven. But you can make the filling up to 3 days in advance. Store in an airtight container.
