Heat oil in a medium size pan on medium heat. Add garlic and onions (if using) and cook till onions turn translucent, about 3~4 minutes.

Next add the mushroom and green pepper. Cook till both the veggies are tender, about 6~8 minutes. Season with salt and pepper. Set aside.

Preheat the oven to 400°F. Line a baking sheet with parchment paper and keep ready.
1 Small French Bread loaf
Slice the French bread in half crosswise. Scoop out some of the crumbs from inside. Place the mushroom mixture on the bread and top with grated cheese. Place it on the baking sheet and bake for 5~8 minutes or until the cheese is melted.
½ cup Grated Cheddar Cheese
Remove from the oven and drizzle with ketchup and sprinkle with the chives and tomatoes. Serve and enjoy!!
