Suafa'i -- Samaon Banana Tapioca pudding (with Chocolate) for #Food of the World

Ingredients

  • 2 Overripe Bananas
  • 1 cup Water
  • 2 tbsp Small Tapioca Pearls
  • ½ cup Coconut Milk
  • 1~2 Sugar, optional
  • 1~2 tbsp Semi sweet Chocolate Chips

Instructions

  • In a small saucepan, combine bananas and water. Bring the mixture to a boil, lower the heat and simmer till bananas are cooked through. Mash it with the back of the spoon or a potato masher to make a smooth mixture.
  • Add the tapioca and mix well to combine.
  • Next add the coconut milk and simmer the mixture until the tapioca are cooked through, stirring frequently to prevent sticking to the bottom, about 15~20 minutes. Tapioca should turn completely translucent.
  • Turn off the heat and stir in the chocolate chips. Mix well until combined.
  • Let the pudding cool completely before serving.
