Zimbabwe -- Dobi (Spinach & Tomato with Peanut Butter sauce)

  • 2 tsp Oil
  • 1 Medium Onion, chopped
  • 2 Garlic cloves, finely minced
  • 2 Medium Tomatoes, chopped
  • 1 Green Chili, chopped
  • To taste Salt & Pepper
  • 6 cups Spinach, , chopped
  • 1 tbsp Peanut Butter (add more if you like)
  • 1 tbsp Parsley, chopped
  • 1 tbsp Cilantro, chopped


  • Add 2tsp oil in a saute pan; add onions and cook till they turn lightly browned around the edges.
  • Add the garlic, tomatoes, herbs, green chili, salt and pepper. Cook for 5~6 minutes or until tomatoes turn mushy.
  • Next add the chopped spinach, cover and cook till spinach is cooked through, about 4~5 minutes.
  • Finally add peanut butter and cook till heated through, about 2~3 minutes. Stir in the chopped herbs and serve with steamed rice.
