Mango Juice Concentrate

Recipe to make refreshing and delicious mango concentrate at home. It is easy to make and kept be stored in the refrigerator for up to 1 month.

Ingredients

  • 4 cups Mango pulp
  • 1½~2½ cups Sugar
  • 4 cups Water
  • ¼ cup Lemon juice

Instructions

To Make the Concentrate:

  • Peel and chop the mangoes. Grind to a puree and keep aside.
  • In a heavy bottom medium size saucepan, combine sugar and water and let it come to a slow simmer.
  • Simmer till the sugar is dissolved, about 8~10 minutes on low flame.
  • Remove from heat and allow to cool completely.
  • After the sugar syrup is completely cool, add the mango pulp, lemon juice and mix well.
  • Pour into clean bottles and store in the fridge.

To make Mango drink:

  • Pour about ⅓ cup of mango concentrate and the rest water to make a cup of mango juice. Top with ice cubes and Enjoy!!

Notes

  • Make sure your hands are completely dry during the whole preparation and storing process.
  • Use 2 tsp citric acid instead of lemon juice.
  • Taste the mangoes before making the simple syrup.
  • Adjust the quantity of sugar based on how sweet the mangoes are. The ones I used had a beautiful mango flavor and were quite sweet. I would start with the lower quantity and increase it based on your taste preference.
  • You can use to concentrate to make amazing tropical flavored cocktails. Sky is the limit.
