Cilantro Lime Quinoa

Ingredients

  • 1 cup Quinoa
  • cup Vegetable Broth or Water
  • 2 tsp Olive oil
  • 2 tbsp Lime juice
  • 2 tsp Lime zest
  • To taste Salt & Pepper
  • ¼ cup Cilantro, finely chopped
  • 1 Green Onion, finely chopped

Instructions

  • In a heavy pot, combine quinoa, 1¾cups of water or broth, olive oil, lime juice, zest and salt and pepper to taste.
  • Bring the mixture to a boil, lower the heat to a simmer, cover the pot and cook for 15~20 minutes, until the liquid is absorbed and the rice grains are tender.
  • Remove from the heat and sprinkle the cooked quinoa with chopped cilantro and green onions. Fluff the quinoa gently. Serve immediately.
