    How to make Vegan Danish Porridge

    Looking for a quick and easy breakfast recipe?? Then you have to try this vegan Danish Grød which is nothing but oat and chia porridge. It takes just 10 minutes to make this creamy and healthy breakfast.

    Chia seeds help to thicken the oats to make the creamiest grod recipe. Serve with cardamom flavored berries for a tasty morning treat. Top with your favorite toppings like chopped nuts, fruit and customize this oat bowl to your liking.

    I love oats and can have them for breakfast, lunch or dinner. I use them in quite a few different recipes like this quinoa oats idli, oats khichdi and this tomato dosa with oats.

    Today’s chia and oat porridge takes about 10-15 mins to make and is thick, creamy and delicious. Chia seeds are one of my favorite ingredient and I try to use them in my every day diet.

    This ‘Danish Grød’ recipe is adapted from Whole Bowls cookbook by Allison Day. It is one of my go-to breakfast porridge that sticks to your ribs and is absolutely delicious. It smells absolutely amazing from the cardamom while cooking the berries. Try this yummy Danish oats recipe - I’m sure you’ll love it.

    Ingredients

    The main ingredient of this Danish oatmeal is Rolled Oats. Quick cooking oats will not work because they won't hold their shape and will become too mushy.

    Non-dairy milk - I use unsweetened almond milk. Any non-dairy or dairy milk will work in this recipe.

    Chia seeds - this superfood is a great addition to your daily diet. They help to thicken the porridge*.

    Ingredients needed - details in the recipe card

    The other ingredients to make this healthy breakfast:

    • fresh or frozen mixed berries
    • maple syrup
    • ground cardamom

    Optional topping ideas:

    • chopped nuts
    • banana or other chopped fruit
    • nut butter - peanut butter and almond butter are my favorite

    Instructions

    In a medium size saucepan, combine milk, oats and salt. Bring to a boil, lower the heat to medium-low and cook stirring constantly, about 3~5 minutes.

    Stir in the chia seeds and cook stirring for another 3~5 minutes, or until the mixture thickens.

    In a small saucepan, combine berries, maple syrup and ground cardamom. Cover and cook till the berries are warmed through and turn soft, about 3~5 minutes.

    To serve, divide the oats porridge equally between the two bowls, top with the berries and Enjoy!!

    Tips

    • Quick cooking steel cut oats are also great to make Danish porridge.
    • Ground flaxseeds are good substitute for chia seeds, but the texture and taste will not be the same.
    • If you are not vegan, then use regular milk.
    • Any of your favorite unsweetened non-dairy milk will work. I love almond or oat milk in my grød.
    • Customize your Danish oatmeal bowls with your favorite toppings.

    Ingredients

    For the Oats:

    • 1 cup Rolled Oats (or quick cooking steel cut oats)
    • 2¼ cups Unsweetened Almond Milk*
    • Pinch of Salt
    • 1 tablespoon Chia seeds

    For the Topping:

    • 1 cup Mixed Berries, fresh or frozen
    • 2 teaspoons Maple syrup
    • ¼ teaspoon Ground Cardamom
    • As needed Chopped Nuts, optional
    • As needed Non dairy yogurt, optional
    • As needed Banana slices, optional
    • As needed Nut Butter, optional

        If this is my breakfast I am not looking at other variations Pavani. This is so nutritious, filling, hearty and healthy bowl for brekky.

      That is one tempting bowl of Danish Grød. Such a healthy and filling breakfast and that too tasty. Love berries, maple syrup, cardamom and chia seeds. So this oatmeal is a perfect way to begin the day.

      Pavani, we use oatmeal very often for breakfast and this is a great recipe with chia and all the delicious berries. I will be using the steel cut oats to make this recipe. I have some quick cooking steel cut oatmeal and thanks for the suggestion.
