    Looking for a quick and easy 2 ingredient bread recipe that has become popular on TikTok recently? Look no further, try this Ice cream bread that literally needs 2 ingredients - ice cream and self rising flour. A very easy make recipe that tastes absolutely amazing.

    You can actually call this is a ice cream bread cake because it has a soft, fluffy texture almost like a cake. Make it plain to serve with butter for breakfast or jazz it up add-ins and serve with tea. Also a great recipe to make with any of your favorite ice cream flavors.

    If you think, 2 ingredient bread and baking with ice cream is strange, then believe me, this is definitely a thing. I learnt about this tasty ice cream bread from MasterChef Australia. The recipe got me intrigued and when I tried it, I was blown away by how easy it is to make and how beautiful the bread turned out.

    Even though ice cream is an unusual ingredient, it has much needed components to make a quick bread. Sugar, fat and flavor are already in there. The other ingredient is self rising flour which includes baking powder and salt.

    This is a great recipe to make with kids. Because it is almost like a science experiment where you mix two unrelated ingredients and then see the final result bake up into an airy and yummy bread.

    Also you can make this ice cream loaf with your kids favorite flavored ice cream flavor. Make this for your family, I am sure they will love it too.

    As I mentioned earlier, you will need just 2 ingredients to make this ice cream bread recipe.

    • Ice cream - flavor of your choice. I recommend using good quality that you enjoy.
    • Self rising flour - this already includes baking powder and salt. But, if you don’t have this on hand, then make your own using all purpose flour, baking powder and salt. See Tips section on how to.

    Recipe for two ingredient ice cream bread is very easy to make. Here's how to make:

    Preheat oven to 350°F. Lightly grease a 8½"x4½" baking pan and line with parchment paper - make sure to leave an overhang to remove the bread easily.

    Start by thawing the ice cream. Remove from the freezer and set aside until soft. You can also simply microwave it in small increments until melted.

    In a medium size mixing bowl, combine self rising flour and the melted ice cream. Mix well to make sure that there are no lumps. If desired, stir in chopped nuts or tutti fruity or dried fruit. Pour the batter into the prepared pan and smooth the top.

    Bake for 35~40 minutes or until a toothpick inserted into the center comes out clean. Remove the pan from the oven and set aside for 5 minutes before transferring it onto a wire rack.

    Cool completely before slicing. The bread is ready to serve. But you can add a simple chocolate ganache and sprinkles to make it extra special.

    Expert Tips

    • Make your own self raising flour by mixing 1½ cups all purpose flour with 2¼ teaspoons baking powder and ½ teaspoon salt. Whisk and use.
    • Good quality ice cream is the key to the recipe.
    • You can definitely make vegan ice cream bread by using your favorite ice cream in the recipe.
    • Feel free to add in some chocolate chips or chopped nuts to make the bread even more yummy!!
    • Get creative and use your favorite ice cream flavor. Want to make strawberry ice cream bread, then use strawberry ice cream in the recipe. Or use butter pecan ice cream or plain vanilla or chocolate
    • To make the chocolate ganache glaze: Bring ½ cup of heavy cream to a slow simmer. Pour into a heatproof bowl with 4 oz. of chopped good quality chocolate. Set aside for few minutes, then give a stir to make a smooth chocolate sauce. Pour over the cooled cake placed and let set for a few minutes.
    • Experiment with the glaze - use simple sugar glaze or lemon/ lime flavored one for a spring/ summer treat.
    • High Altitude recipe:
      • Increase oven temperature to 375°F.
      • Mix 1½ cups all purpose flour with 1½ teaspoons baking powder and ½ teaspoon salt. Whisk and use.
      • Bake for 30~35 minutes or until a toothpick inserted into the center comes out clean.

      The icecream bread is one of my husband's favourites. We make it for father's Day ever since a time he left a whole pack of cookies and cream icecream on the countertop and forgot about it. I like this tutti footi addition and the glaze on top. Will try that for this Father's day.
