So here we are the final post for this month’s mega marathon, ‘Explore the Flavors‘. I have a sweet treat to celebrate the successful completion of the marathon. Ice cream is probably one of those treats that is sold as street food all over the world. So today I have a creamy and delicious Rainbow Dash Ice cream, which is nothing but chocolate ice cream served with sprinkles.
Chocolate Ice Cream with SprinklesMy 5 year old found this Rainbow Dash Ice cream recipe in one of her ‘My Little Pony’ coloring books. She has been bugging me to make it ever since she saw it. She wrote the recipe and gave it to me twice and I misplaced it both times. Finally she ripped that sheet off the book and started walking around with it. I knew I had to give in at that point. So we bought the ingredients and she made the ice cream herself, with some help, of course.

India has Kulfi, it’s own desi version of ice cream. Italian ice cream is Gelato which is very traditional and popular street food in Italy. US is the largest consumer, about 23 liters of ice cream is consumed per person per year.Chocolate Ice Cream with SprinklesThis Rainbow dash ice cream needs only 4 ingredients and there is no need for an ice cream machine. Whipping the cream, is probably the only step that needs some skill, otherwise everything else is add, mix or fold. Ice cream is creamy, chocolaty and oh-so delicious. Kids would love the confetti on top. Make it as a summer treat for the kiddos, they will LOVE it.

Ingredients
  • 1 can Condensed Milk
  • 2/3 cup chocolate syrup
  • 2 cups heavy cream
  • As needed Rainbow Sprinkles

Instructions
  1. In a large mixing bowl, combine condensed milk and chocolate syrup until evenly mixed.
  2. In a separate bowl or the bowl of a stand mixer, whip cream until stiff peaks form.
  3. Gently fold the cream into chocolate mixture.
  4. Line a 9"x5" loaf pan with aluminum foil.
  5. Pour the chocolate mixture into the prepared loaf pan. Cover and freeze for at least 6 hours.
  6. Serve with sprinkles.

  6. My girls are crazy for my little pony and have all the character toys, lo wants dresses, luncbag, umbrella everything rainbow dash. She also asked me to make the ice cream once.   10. Involving Kids in cooking and baking is real time fun..my 10 year old enjoys helping me in kitchen so can imagine the fun you mom daughter must have been while making this ice-cream. Now coming to the recipe, it is fuss free , the ice-cream is no doubt creamy and best part is the colorful toppings which makes it all the more inviting…lovely share !
