    Aloo tikki wrap is an easy to make and absolutely delicious sandwich. This is a very popular Indian street food made with a scrumptious potato aka aloo patty wrapped in roti or tortilla.

    This Indian wrap recipe is commonly known as aloo frankie or potato frankie. A great dish to have in ones repertoire because it is perfect for quick meals and to pack for lunchboxes or even picnics. Also it is a yummy kid friendly dish.

    About the Recipe

    I love street food, especially spicy and delicious Indian style ones. Depending on which part of India you go to, the variety of street food varies. But potato based dishes are common all over India. Like this stuffed bread pakoda from Mumbai or this dabeli from Gujarat or this crispy aloo chaat from Delhi.

    Aloo patty or aloo ki tikki aka potato cutlets are quite popular too, especially on the trains. I remember gobbling these hot aloo tikki during the long train journeys.

    These delicious patties also form the base for many recipes. As in, aloo tikki chaat, where the patties are served along with spicy chickpea stew.

    So in this aloo tikki wrap, potato patty is wrapped in a roti or a tortilla. You can add other veggies like carrot, green beans etc while making the tikki. That would make it more like a veg frankie recipe. Shredded cabbage and pickled onions add flavor and crunch to this delicious sandwich.

    This is a healthier alternative to the popular Mcaloo wrap or the aloo wrap sold by McDonalds. Try this easy aloo tikki frankie recipe, I am sure you will love it.

    Ingredients

    Most of the ingredients needed to make this frankie wrap recipe are pantry staple. Here's what you need to make the aloo patty:

    • Potatoes - any variety would work. You need boiled, peeled and mashed potato.
    • Vegetables - I used only onion and green peas. But feel free to add other veggies like carrot, green beans, cauliflower etc.
    • Flavoring - I like to use pav bhaji masala and chaat masala. But you can add garam masala or even Kitchen king masala or both. I also add some ground cumin.
    • Binding - all purpose flour and bread crumbs
    • Salt
    • Lemon or lime juice

    To make the aloo tikki wrap recipe, you need:

    • Aloo patty or burger
    • Store-bought or homemade roti or tortilla
    • Pickled onions
    • Shredded cabbage or lettuce or your favorite salad mix
    • Mayonnaise or green chutney (optional)

    To make pickled onions, you need:

    • Red onion
    • Vinegar - feel free to use rice or white wine or apple cider vinegar
    • Salt, sugar
    • Garlic, dry red chili and cilantro

    This aloo frankie roll recipe has couple of components to make. The main component is the aloo ki tikki. The second component is flatbread, either roti or tortilla. I always have store-bought tortilla on hand for quick recipes like this. Pickled onions are optional, but make this wrap oh-so delicious.

    How to make Picked Onions

    Place the sliced onions in a sieve or colander. Bring water to a boil in a small saucepan. Pour the boiling water on the red onions and drain well.

    In a small mixing bowl, combine vinegar, salt, sugar, chili, garlic and cilantro. Add the drained onions to the vinegar mixture. Mix well and cover and set aside for at least 30 minutes for the flavors to mingle.

    How to make Aloo Tikki

    Next make the potato patty. Heat oil in a medium size sauté pan. Add onions and cook until translucent. Add ginger-garlic paste and cook for 1 minute. Next add green peas, chili powder, pav bhaji masala, ground cumin and salt. Cook for couple of minutes. Turn off the heat and add chaat masala and lemon juice.

    In a medium size mixing bowl, mash the boiled and peeled potatoes. Add the cooked onion mixture to the mashed potatoes. Stir in flour and bread crumbs. Mix well to form a smooth dough. Taste and adjust the seasoning.

    Divide the potato mixture into 8 equal size balls. Shape them into either long rolls, like kebabs or pat them down into round patties.

    Heat a medium size pan with 2 tablespoons of oil. Place about 3~4 patties in the hot pan and shallow fry them until golden brown on both sides. Remove onto paper towel lined plate. Repeat with the remaining patties.

    Assemble Aloo Tikki Roll

    With all the components ready, it is time to make aloo tikki wrap. Warm the roti or tortilla briefly in a microwave or on a dry skillet or griddle until pliable.

    Spread either mayonnaise or green chutney on the tortilla (optional). Place tikki on the lower half of the wrap, top it with shredded cabbage and pickled red onion. Roll the wrap up from the bottom tucking in the sides to hold the filling. Half the wrap and serve immediately.

    Expert Tips

    • Instead of making aloo frankie you can make veg frankie roll by adding more veggies to the potato mixture.
      • Carrot, green beans, cauliflower, corn, peppers etc. are all great to add in this recipe. Make sure to finely chop them.
      • Cook them along with onions until tender before adding them to the mashed potato.
    • Flavorings can be customized to your liking. Garam or Kitchen king masala are great options. Or keep it simple and just use salt and pepper.
    • If the potato mixture does not hold together, than stir in some flour and/ or bread crumbs to form a cohesive mixture.
    • Aloo tikki can be made 3 days in advance and stored in an airtight container in the refrigerator. But the assembled frankie are best to eat the same day.
    • To make the pickled onions, you can use either rice or white wine or apple cider vinegar.
    • Pickled onions are great to use on burgers and sandwiches.
    • You can jazz up the shredded cabbage by making a homemade cabbage slaw. Simple mix lemon juice and salt to the shredded cabbage. Mix well and use. Other grated veggies like carrot, peppers, zucchini can also be added to this slaw.

    This is an easy to make and absolutely delicious Indian style sandwich. Aloo Frankie is a popular street food that is made spicy with potato patty wrapped in tortilla. Serve for any meal or snack or even pack in lunchbox.

    Ingredients

    For Pickled red onions:

    • 1 Medium Red Onion, thinly sliced
    • ½ cup Vinegar*
    • ½ teaspoon Salt
    • ½ teaspoon Sugar
    • 1 clove Garlic
    • 1 Dry red chili
    • 1 sprig Cilantro, optional

    For the Aloo Tikki:

    • 4 Medium Potatoes, boiled and peeled
    • 2 teaspoons Oil, plus more to cook tikki
    • 1 Small Onion, finely chopped
    • 1 cup Green peas
    • 1 teaspoon Ginger-garlic paste
    • ½ teaspoon Red chili powder
    • 1 teaspoon Pav bhaji masala
    • ½ teaspoon Ground Cumin
    • ½ teaspoon Chaat Masala
    • ¼ cup All-purpose flour
    • ½ cup Bread crumbs
    • 2 teaspoons Lemon or Lime juice
    • To taste Salt

    Other Ingredients:

    • 8 Store-bought or Homemade Roti or Tortilla
    • As needed Mayonnaise or Hung Curd
    • 2 cups Shredded Cabbage or lettuce or salad mix
    • 2 teaspoons Lemon juice

    Instructions

    Make Pickled Onions:

    • Heat 2 teaspoons oil in a medium size sauté pan on medium heat. Add onions and cook until translucent, about 3~4 minutes. Add ginger-garlic paste and cook for 1 minute. Next add green peas, chili powder, pav bhaji masala, ground cumin and salt. Cook for 2~3 minutes. Turn off the heat and add chaat masala and lemon juice.
    • In a medium size mixing bowl, mash the boiled and peeled potatoes. Add the cooked onion mixture to the mashed potatoes. Stir in flour and bread crumbs. Mix well to form a smooth dough. Taste and adjust the seasoning.

      I remember the craze when Frankie's first became a craze all over India. It was like having a burger but in a roti. It also was a good way to get my kids to enjoy salad as they would happily eat it with either aloo or veggie tikki wrapped in roti. Your aloo tikki wrap recipe is a reminder for me to make it as I haven't in a long time.

      Aloo frankie was one of my favorite wraps for school. Mu did not put the pickled onions for school and I loved it when she left one for me to have in the evening with the onions. Practically could eat it every day.
