Here, I have yet another delicious Indian stir fry recipe with bok choy and spinach. Idea for this dish came when I bought fresh bok choy for the first time years ago from an Asian store. I made this quick curry with Indian spices and we loved the combo.
This has been a favorite ever since and I make it quite often for my family. Since it is so easy to make, it is perfect to make on a weeknight. Add plant based protein like edamame, cooked beans, tofu or paneer to make this a wholesome dish. Serve with rice and dal for a delicious and hearty meal.

Here are the ingredients you need to make this bok choy/ pok choi recipe:
- Baby bok choy aka pok choi ~ I love using baby bok choy because they are tender and delicious. Look for bunches with fresh green leaves without any bruises or wrinkles.
- Spinach ~ you can also use Swiss chard or kale instead here.
- Carrots ~ you can skip the carrots all together or substitute with other veggies like green beans, bell pepper or potato.
- Onions or scallions (optional)
- Garlic cloves, green chilies and curry leaves.
- Turmeric, garam masala and salt.
- Cumin seeds and dry red chilies.

Here is how to make this quick Indian bok choy and spinach stir fry recipe:
Heat oil in a sauté pan on medium heat. Add onions or green onions (if using), garlic, green chilies and carrots. Sauté until the onions turn translucent.
Next add carrots and cook for a few minutes. Stir in the chopped bok choy, spinach and turmeric. Mix well. Cook until the carrots are tender and the greens have wilted.
Season with garam masala and salt. Mix well and cook for another couple of minutes. Turn off the heat. Serve hot with rice and dal.

- I love using baby bok choy because they are tender and delicious. Look for bunches with fresh green leaves without any bruises, wrinkles or discoloration.
- You can also use Swiss chard or baby kale instead of spinach. You can also skip these greens altogether and make the curry with just bok choy.
- Feel free to substitute carrots with other veggies. Green beans, bell pepper or potato. etc. are all great options.
- Use kitchen king masala instead of garam masala for a spicy twist.
- Add plant based protein like edamame, cooked beans, tofu or paneer to make this a wholesome dish.

Ingredients
- 2 teaspoons Oil
- 1 small Onion or 3~4 scallions, chopped (optional)
- 2 Garlic cloves, finely minced
- 2~3 Green chilies, slit
- 6~8 Curry leaves
- 2~3 Medium Carrots, peeled and diced
- 4~6 bunches Baby Bok Choy, thoroughly washed and chopped
- 2~3 cups Baby Spinach, chopped*
- ¼ teaspoon Turmeric
- 1 teaspoon Garam Masala
- To taste Salt
